The major difference to me is, as you said, mostly in the tic-tac/passing between players. Simply put, the ball direction is predictable - it goes where you would expect it to go. The only other aspect is that there is no paint on the feet. In the non-milled version, the paint on the player's feet is often glossy and could be slightly slippery in comparison to the bare metal. You are able to catch and pin the ball a little easier. This latter difference is only slightly noticable though.
All in all, when you use the milled feet the first time you feel that your playing/ball control is better than it was before. It's actually a welcome modification to me. I wouldn't worry about any required "adjustment" time.
