The main thing is to get a table that you enjoy playing on. I have friends who much prefer the 1 man goalies as well and I think if manufacturers went back to that style many of the people who enjoyed it in the 70s would feel nostalgic and want to show their kids their trick shots and stuff, that'd be cool to get them playing again.
If you want to become a lot more competitive, then I'd suggest a Tornado, it's what the majority of bars have. There's 2 cheaper versions of Tornadoes, but the Cyclone 2 is worth it for the better bearings and thicker walls. They're expensive though, I found a used one on Craigslist in Eau Claire for $650, here's the link:

Also there are converter kits to take change it to 1 man goalies with ramps, never actually seen them in real life though. I'd be happy to look at other cheaper tables around here with you, generally the heavier the better. I enjoy playing on any table, and it's nice to play on a variety of them (too bad the Euro tables aren't carried in the US, you'd prolly really like them, although they went to telescopic rods and I'm not sure about that stuff), but if you play against people on a Tornado and aren't used to it, you'll be at a big disadvantage (but there are other tables in town for that if you want). Maybe whichever vender has the tables in the bars around here has some used ones they could sell. I'll also email one of the guys in Fargo to see if they know of any tables for sale.
